I should have called this a Salad Done in a Hurry. Working long hours has been part of my vocabulary for quite some time now. Time seems to be on my side during the night which is fine, don’t get me wrong, but during the day, there seem to be not enough hours, minutes and seconds to accomplish everything I need. And that is why I am a huge fan of leftovers. Just for one day! And after, I cannot promise I will be able to eat the same food again.
I needed something quick to eat with leftover roasted chicken from the day before, and that is when I came up with Avocado, Pepper, Apple, and Cranberries Salad. I had a ripe avocado, and two apples left in my fruit bowl and thought why not mix the two together. What harm can be done, right? As I was slicing the avocado, I realized that I could go bonkers or better yet creative. So I started slicing sweet mini yellow and red peppers and thought that the colors looked so beautiful with the apples and the avocado. I started thinking, hey! Why not go a little more extra and be healthy by adding cranberries. Now I did it!
After adding and mixing everything together, I thought to myself, why should I ruin the salad by creating a dressing? I decided not to. And that was the best idea. So I added fresh cracked pepper for a wild and fiery taste. I could not have done anything better for my health and my stomach. (I can feel it smiling again when writing this post. LOL) I have to say that the mixture of the avocado, apples, peppers, and cranberries was just sinfully tasteful. The sweet and juicy taste of the apples and the slight taste of the cranberries is just what the avocado needed. The crunchiness of the peppers was the wild card in the salad. And the black pepper, what can I say? Just what it needed! And please hold any dressing.
