Any Caribbean Basic Herbs and Spices Blend starts with garlic, parsley, and thyme. Other ingredients such as scallion, chive, onion, green pepper, celery, cloves, vinegar, and lemon or lime juice, black pepper, and hot pepper are added for flavor enhancement. A good Caribbean Herbs and Spices Blend is the foundation of any great meals.
Many Caribbean people usually add oil and many others do not. Also salt is an item that is often substituted by “Maggie Cube” or chicken bouillon cube or powder. Nowadays many Caribbean people including myself are opting not to add salt for health reasons. For example, if your blend does not contain any salt and you want to add Worcestershire sauce, you can easily adjust the taste. Because Worcestershire sauce has sodium, seasoning and tasting may be difficult a challenge. But if you add salt to your blend and you want to add either a sauce, other types marinade or even another mixed spiced, it is somewhat difficult to control the salt.
Many people also add oil in their blend. I prefer not to because I find the blend to be more versatile for cooking many different dishes. And again, the oil sometimes thickens depending the temperature of your refrigerator and may affect the taste of your dish. I prefer to add additional oil to my dishes when it is necessary.
Preparing a basic herb and spices blend reduces time spent in the kitchen. Quantity and preservation are a huge factor for meals preparation. Depending on the amount of cooking you will do during the week, you will know how much to prepare. For preservation, I would recommend an air tight container and preferably a mason jar. Periodically you may have to adjust the seasoning in your dish, but don’t worry, your time spent cooking in your kitchen will be well spent. Adding additional spices or herbs is very common.

Basic Herbs and Spices Blend for every day cooking #3
- 15 garlic cloves each clove about the same size
- 1 tablespoon ground pepper
- 1 cup roughly chopped flat parsley
- 3 tablespoons chopped chives
- ½ cup roughly chopped scallions
- 1 medium onion roughly chopped
- 2 tablespoons thyme leaves only
- 1 medium size hot pepper habanero or scotch bonnet
- 1 cup fresh squeeze lemon juice
- After cleaning, chopping and slicing all your ingredients add all in a blender or food processor. Blend to a smooth paste with lemon juice. You may have to do this in batches.
- Pour in your preferred air tight container or mason jar and store in a well temperature controlled refrigerator.
Use the branches from the thyme sprigs in your stocks.
