Lobster on a Budget? Absolutely!

We’ve all been there: staring at a $50+ lobster dinner featuring plain butter, a side of uninspiring carbs, and frozen vegetables pretending to be fresh. This recipe lets you indulge in lobster luxury at home, for a fraction of the cost.

Home-Cooked Lobster: The Undisputed Champion

Skip the fancy restaurants and the pressure to maintain your composure while battling a lobster. Who needs fussy utensils when you can embrace the primal satisfaction of cracking open a perfectly cooked crustacean with your bare hands?

Just like a masterpiece needs quality paint, a great dish needs quality ingredients. Real butter makes a world of difference. Live Lobster Mishaps? We’ve All Been There (But Let’s Avoid Them!)

We’ve all seen those funny (or maybe not-so-funny) videos of people trying to wrestle live lobsters in the kitchen. Thankfully, this recipe uses pre-cooked lobsters, sparing you any potential chases or pinches. However, if you’re feeling adventurous and want to tackle live lobsters, here are some tips for selecting and buying them:

  • Look for Lively Lobsters: Choose lobsters that are active and responsive. Pick them up and see if their claws snap back and their tails curl under them.
  • Healthy Shell: The lobster’s shell should be hard and free of cracks or discoloration.
  • Size Matters: For this recipe, smaller lobsters (1-1/2 pounds) are ideal. They cook more evenly and tend to be more affordable.
  • Ask the Experts: Don’t be afraid to ask the fishmonger for help choosing a good lobster. They’ll be happy to answer your questions and ensure you get a fresh, delicious crustacean.

The Flavor Explosion Awaits

Imagine this: succulent lobster bathed in a fragrant broth of water, fresh lime juice, scallions, parsley, garlic, and a touch of heat from the NouBess Hot and Spicy Sauce. • 4 lobsters about 1 1/2 pounds each
  • 2 tbsp kosher salt
  • 1/3 cup lime juice fresh
  • 8 oz unsalted butter
  • 4 stalks scallions chopped
  • parsley small bunch
  • 2 stalks scallions finely chopped – for the sauce
  • ¼ cup champagne vinegar
  • Black pepper to taste
  • 1 tsp Noubess Original Hot and Spicy Sauce or hot pepper without seeds and membrane – optional

  • In a large pot, bring water to a rolling boil. Add the lobsters, salt, parsley, scallions, and lime juice. Cover the pot and cook for 10 minutes after the water returns to a boil.
  • While the lobsters simmer, prepare the sauce. In a separate saucepan, melt the butter and add half of the chopped scallions (reserve the other half for garnish). If you’re using hot pepper, add it now (be sure to remove the seeds and membrane for a milder heat). Sauté for 1-2 minutes.
  • Pour in the champagne vinegar and black pepper. Let the sauce simmer for another 1-2 minutes. Remove the pan from heat.
  • Remove the cooked lobsters from the pot and allow them to cool slightly.
  • Plate your perfectly cooked lobster and serve with the remaining chopped scallions sprinkled over the top. Don’t forget the star of the show – the spicy butter sauce – for dipping!
