Coconut Curry Chicken – Creamy, Spicy, and Simply Irresistible

If you love a good curry, this Coconut Curry Chicken will steal your heart—and maybe even your taste buds. This version is creamy, gently spiced, and filled with Caribbean flair. It’s made with juicy chicken thighs, simmered slowly in a rich coconut sauce with warm spices and herbs. It’s easy enough for a weeknight dinner but flavorful enough to impress guests on the weekend.

Let’s get one thing straight—not all chicken dishes are curry just because they’re spicy or yellow. True curry flavor comes from the curry powder itself, not just the color. In Haiti, for example, we make a beloved dish called Poulet en Sauce (or Poulet Creole or Poulet a L’Haitienne), which gets its beautiful red hue from tomatoes, not curry powder: different dish, different vibe.

This Coconut Curry Chicken is the real deal. It has curry. It has coconut milk. But it’s also intentionally simple—no cardamom or ginger here. Why? Because coconut milk can be intense, and sometimes you just want a meal that’s bold yet balanced.

Why You’ll Love This Coconut Curry Chicken

  • Flavorful but not overwhelming: The curry and coconut blend beautifully without overpowering each other.
  • Customizable: Toss in peas, chickpeas, or zucchini if you’re feeling fancy.
  • Perfect for meal prep: This is a one-pot coconut curry chicken, and it tastes even better the next day.
  • Great with any side: White rice, rice and peas, bulgur wheat (ble), or root veggies—take your pick!

Let’s Talk Curry Powder

Yes, the curry powder matters. My go-to brands?

  • Badia – earthy and bold.
  • Simply Organic – mellow and perfect for poultry.
  • McCormick – great for red meat but works in a pinch for chicken.

Each brand has its own kick, so use what you love or what you’ve got in the pantry.

The Secret to Flavor: Marinate That Chicken!

Let it soak up the goodness for at least 2 hours (or overnight if you’re planning ahead). That’s where the magic starts. Also, don’t skip the step of browning the chicken—it builds deep flavor before the coconut milk even hits the pot.

Pro tip: I use natural, unprocessed chicken. So while the recipe calls for 8 thighs, it’s more realistic to serve 4 people unless you’re feeding toddlers. Let the island-style curry chicken shine with bold flavors.

Oh, and about the heat: Don’t fear the habanero. Once you remove the seeds and membrane, it’s just the right amount of kick without making your mouth cry. Or, you can use Noubess Hot and Spicy Sauce.

What’s in Coconut Curry Chicken?

Let’s break down the key ingredients so you know exactly what’s going into your pot—and why it matters.

  • Chicken Thighs: I prefer bone-in, skinless thighs because they stay juicy and tender. They soak up all the curry-coconut flavor like a dream. You can also use drumsticks or even boneless thighs if that’s what you have.
  • Onion & Garlic: These two are the aromatic base of the marinade and sauce. They bring that savory depth that holds everything together.
  • Spices (Curry Powder, Cumin, Cloves): Curry powder is the star here—choose your favorite brand based on flavor. A touch of cumin adds warmth, and the whole cloves lend a subtle, almost sweet undertone.
  • Apple Cider Vinegar: This brightens the dish and tenderizes the chicken during marination. It’s a quiet MVP.
  • Fresh Herbs (Parsley, Thyme, Bay Leaf): These give the sauce that familiar, home-cooked Caribbean taste. Always use fresh if you can!
  • Coconut Milk: The base of the sauce—creamy, slightly sweet, and perfect for mellowing out the heat and spices. Make sure you’re using full-fat canned coconut milk, not the watery stuff from the carton.
  • Whole Hot Pepper (Habanero or Scotch Bonnet): Brings that signature Caribbean heat. Don’t worry—it won’t overpower the dish because we’re removing the seeds and membrane. You’ll get the flavor and a gentle kick.
  • Salt and Pepper: Because let’s be honest—no dish is complete without seasoning to taste!
  • Olive Oil: Used both in the marinade and for browning the chicken. You can swap in avocado oil or your favorite neutral oil if preferred.

Tips & Notes

Marinate for Maximum Flavor:
The longer the chicken marinates, the better the flavor. If you’re short on time, aim for at least 1 hour—but overnight is ideal.

Don’t Skip the Browning:
Browning the chicken before simmering locks in flavor and gives the dish a richer base. It’s worth the extra step.

Coconut Milk Matters:
Use full-fat canned coconut milk for the best creamy texture. Light versions or coconut milk from cartons will water down the sauce, and nobody wants that.

Spice Control:
Want more heat? Leave a little membrane in the pepper. Want zero heat? Skip the pepper altogether, or use a milder chili.

Thickening the Sauce:
If your sauce is too thin after simmering, cook it uncovered for the last 10 minutes to let it reduce naturally. No cornstarch needed!

Herb Substitutions:
No fresh thyme or parsley? Dried herbs work too. Use ½ teaspoon of dried thyme and parsley for every fresh sprig.

Make It a One-Pot Meal:
Add veggies like zucchini, bell peppers, green peas, or even canned chickpeas for extra nutrients and fewer dirty dishes.

Leftovers Are Better:
Like most stews and curries, this dish tastes even better the next day. Store in an airtight container in the fridge for up to 3 days or freeze for up to a month.

Pairing Ideas:
Of course, you can go classic with white rice, but don’t sleep on pairing it with rice and peas, bulgur wheat (ble), cornmeal, or even boiled root veggies for a wholesome twist.

As someone who’s 66 years old and has been cooking since a teenager and worked in many food establishments, I always like to find different views and ideas from others. I use to live in South Florida and experienced Caribbean cooking from wonderful roadside setups way before food trucks. Jamaican, Haitian, West Indian, Bahamian, etc. foods were all available (sometimes not licensed but that meant the food was good). I must admit I don’t follow recipes, nor did my mother. You get the concept and put your spin on it. That to me is a compliment when someone borrows one of my dishes and does their own thing to it! This looks lovely and is quite inspirational. Btw, I love cloves. It just adds something like allspice does. I will be following you and sharing. Thanks so much!

Love it! Second time making this week! Only question is when you say boil marinade? It’s not very liquid to boil but amazing and delicious will be a staple with me now xx

    1. Thanks, Lucy! We’re happy that you like the recipe. When we say to boil the marinade, we meant to cook it a bit so all the flavors can be infused together.

This was a very very tasty dish, quick and simple to make, I used chicken breast and I have to admit I omitted the cloves as l cannot bear their overpowering flavour! Even just 1 always spoils a dish for me.
Highly recommend but don’t know what it’s like with cloves, but I will use thigh meat next time.

    1. Thanks Gaynor! Glad you tried our recipe. I have to admit that not too many people like cloves. The flavor could be overwhelming. Have an awesome day! :)
