What are Root Vegetables?

Root Vegetables are also called provisions or starchy vegetables. They include carrots, beets, potatoes, sweet potatoes, and radishes. This section only includes yam, sweet potatoes, potatoes, and yucca recipes.

Root vegetables are low in calories but rich in complex carbohydrates, fiber, and antioxidants such as Vitamin C and Beta-Carotene. They are also one of the healthiest vegetables to eat.

These vegetables also serve as substitutes for rice, cornmeal, bulgur wheat, and millet in Haiti. They are either boiled, fried, roasted, or grilled. Check out the recipes below.
