This healthy and delicious Chickpeas Salad with cucumbers, olives, and sweet drop red peppers is excellent for lunch. Also, perfect as a side dish for a casual or formal dinner!
Chickpeas are a type of legume I enjoy very much. It adds texture and a great taste to salads and makes one of the most enjoyable purees. I want chickpeas salad recipes as my go-to salad during the week for lunch. My most common salads are Chickpea, Cucumber, Roasted Bell Peppers Salad and Cucumber, Chickpeas, Olive & Tomato Salad. Although I enjoy them both, and they are effortless to make, I also like adding red pepper drops.

The best part about this salad is that I used organic canned chickpeas, and it took only just a few minutes to make. Soaking would take much longer.
What are Sweet Drop Red Peppers?
I was first introduced to Sweet Drop Red Peppers when I attended the Fancy Food Show in New York City in 2019. The Fancy Foods Shows are held for manufacturers, buyers, and retailers. The Specialty Food Association (SFA) has a few shows in different cities to help people in the food industry make connections every year.
Sweet Drop Red Peppers are small, tear-shaped peppers. The pepper seed is a combination of cherry pepper and jalapeno pepper and is both sweet and sour. Combine with chickpeas, cucumber, and olives, and these peppers drops are perfect for this vegan chickpea salad.

I will always say canned chickpeas for salad. Canned chickpeas make the best and quick salad—no need to wait for the chickpeas to soak and cook. I also prefer using organic canned chickpeas.

- Cucumber
- Sweet Drop Red Peppers or tomatoes
- Red Onion
- Fresh parsley
- Pitted Black Olives
- Pitted Green Olives
- Extra virgin olive oil
- Lemon juice
- Honey
- Garlic
- Kosher salt and pepper
Tips or making Chickpea Salad Recipe

- Use canned chickpeas to make a quick salad – I use organic canned chickpeas
- This salad last 2 – 4 days in the refrigerator
- Use Fresh Herbs to make this salad. Fresh Parsley adds tons of flavor. Use Cilantro if preferred.
- Chop your veggies into bite-sized pieces.
- Use extra-virgin if possible, either plain or infused. Plain extra-virgin is less processed and has a lighter flavor. You can also use Noubess Sorrento Lemon Infused Extra Virgin Olive Oil, or Noubess Blood Orange Infused Extra Virgin Olive Oil.
- Use bell peppers for a crunchier taste.

Delicious Chickpeas Salad with Cucumber and Olives
Equipment
Ingredients
- 1 – 15 ounce can Chickpeas rinsed and drained
- 1 English cucumber diced and seeds removed or 1 or 2 regular cucumber
- 1 – 8 oz Sweet Drop Red Peppers or tomatoes, sliced
- 1 small red onion sliced
- 3 tbsp fresh parsley chopped
- ½ cup pitted Black Olives
- ½ cup pitted Green Olives
- 3 tbsp extra virgin olive oil
- 1 tbsp lemon juice
- 1 tsp honey
- 1 garlic clove crushed
- Kosher salt and pepper to taste
Instructions
- Place the lemon juice, oil, garlic, and honey in a small bowl or bottle, wisk, or shake well.
- Cut the cucumber in half lengthways, scoop out the seeds and cut into 1 cm (½ inch) slices. Cut the tomatoes into cubes roughly the same size as the chickpeas, cucumber, onion, parsley, and olives in the serving bowl.
- Pour the dressing over the salad and toss lightly to combine. Serve at room temperature.
