Delicious Haitian White Rice with Peas and Carrots
Delicious White Rice with Peas and Carrots is a staple in our home. It is one of the best rice dishes we enjoy at home besides Rice with Djon Djon (Black Haitian Rice), the national rice dish of Haiti. Best served with Poulet en Sauce (Poulet a L’Haitienne or Chicken with Creole Sauce), this recipe is the essence of a satisfying meal that will bring a smile to your face every time you think about it.
White rice is not a type of grain we eat every day because of its health benefits. White rice is said to have less nutritional value than other types of grains of rice. It is undoubtedly a staple in every home or culinary cuisine, but not the healthiest to make it the number one in our home.
White Rice with Peas and Carrots is can also be called Rice with Veggies because they are both made with vegetables. The difference with this recipe is the herbs and spices used as a seasoning. This rice recipe is very simple, not a lot of ingredients needed, and delicious enough to ask for a second plate.

What are the ingredients in this dish?
You probably have all the ingredients in your cupboard. If not, you can always refer to the detailed list below.
- Rice: I used white rice for this recipe. I normally make this dish with Goya Jamisne Rice, Kirkland Signature Enriched Long Grain White Rice, or Madame Gougousse Jasmine Rice.
- Oil: always extra virgin olive oil. It is light and flavored oil that gives a nice aroma to the rice dish.
- Fresh garlic: chopped or minced fresh garlic cloves are always better to use than powdered garlic.
- White onion: fresh chopped or sliced onion is better to use than onion powder.
- Frozen peas and carrots: I always buy a high quality brand.
- Chicken Bouilon Powder: I use this brand – click here. The name of the product is Osen Chicken Consommé. You can use it practically as a chicken bouillon in soups, bean puree, other rice dishes, meat and poultry dishes.
- Italian Seasoning: I use either Simply Organic or McCormick Italian Seasoning. Both brands have a lot of flavor and the aroma is perfect vegetables dishes as well as grains dishes.
- Water: when adding water to rice, never use cold or icy water; only warm or room temperature water. You don’t want to disrupt the cooking process and temperature.




How to make White Rice with Peas and Carrots
There’s no shortcut to this rice recipe. It will taste delicious only if you use good ingredients.
When cooking rice, it is recommended to use a good pan or pot.
- First heat up the oil in the pan. Add the chopped garlic, and sliced onion. Cook, stirring for about 2 minutes.
- Add the veggies, the chicken bouillon, and the Italian Seasoning. Stir to mix and cook briefly.
- Add cleaned rice, and stir to combine and cook for 2 minutes.
- Add water and gently stir the rice mixture and bring to a boil. Once water has almost evaporated, lower heat and continue cooking the rice covered for about 25 to 30 minutes.
- Serve hot.

Notes and Tips
- Make this rice recipe as a side dish or main dish.
- Do not add too much water or the rice will be too soft and will have a pasty like texture. Follow the instructions on the packaging or add 1 cup of water for every cup of rice. If you need to add more water only add by increments of 1/4 cup of water. The moisture in the vegetables will help cook the rice.
- Make it with enduie! The dish will be more delicious and you only have to adjust the salt quantity.
- Not all chicken bouillon cubes are powdered chicken bouillon are the same. Both the taste and the sodium content are different.
- You can use chicken stock, or vegetables stock in you prefer. I am not a fan of beef stock when cooking rice. The taste is not the same.
- This recipe uses 3 cups and 8 oz bag of frozen and thawed peas and carrots will serve about 6 to 8 people.
- To serve this dish as a complete meal, add a simple salad of lettuce, tomatoes and cucumber and Snapper in Creole Sauce, Turkey in Creole Sauce, or Oxtail.
