First: What Is Djon Djon?

Djon Djon is the common name for the dried black mushrooms prized in Haitian cuisine. The mushrooms are especially associated with Northern Haiti and are known for producing a dark, earthy, savory broth.

Unlike common mushrooms, which are sliced and added directly to a dish, dried Djon Djon is traditionally prepared to extract its flavor and color into the liquid. That broth then becomes the foundation for dishes such as Diri Djon Djon.

If this ingredient is completely new to you, start with my What Are Djon Djon Mushrooms? guide. It explains where Djon Djon comes from, how it is traditionally used, its cultural importance in Haitian cooking, and the different forms you may encounter.

How Do You Cook with Djon Djon?

When using whole dried Djon Djon mushrooms, the goal is usually to create a flavorful mushroom broth.

The mushrooms are cleaned and steeped or simmered in water until they release their characteristic dark color, aroma, and flavor. The liquid is then carefully strained before being used for cooking.

Djon Djon powder offers another option when whole dried mushrooms aren’t available or when you need a more convenient way to introduce the flavor into a recipe.

Once you understand how to extract and use the flavor, Djon Djon becomes much more versatile than you might expect.

Start with the Classic: Haitian Diri Djon Djon

If you’re cooking with Djon Djon for the first time, start here.

Diri Djon Djon, also known as Riz Djon Djon or Haitian black mushroom rice, is one of Haiti’s most recognizable rice dishes.

The rice cooks in the seasoned Djon Djon broth, absorbing its dark color and distinctive earthy flavor. Depending on the cook and family tradition, peas or lima beans, along with aromatics, may also be included.

It’s a beautiful side dish for chicken, meat, seafood, vegetables, and special-occasion meals.

This is where we start moving beyond traditional preparations.

Djon Djon butter is a compound butter inspired by the deep, savory flavor of Haitian black mushrooms.

It can be used to add another layer of flavor to poultry, seafood, vegetables, rice, pasta, and other dishes.

It’s also an easy way to experiment with Djon Djon outside of traditional Haitian rice recipes.

Dried Djon Djon or Djon Djon Powder?

Both can have a place in the kitchen, but they aren’t exactly the same experience.

Whole dried Djon Djon is the traditional choice. Preparing it allows you to extract the mushroom broth that gives classic Haitian dishes their characteristic flavor, aroma, and color.

Djon Djon powder can be useful when whole mushrooms are difficult to find or when convenience matters.

Can You Substitute Black Rice for Djon Djon Rice?

Not really.

Black rice gets its color naturally from the rice itself. Diri Djon Djon gets its dark color and distinctive flavor from Djon Djon mushroom broth.

They may look somewhat similar on a plate, but they are different ingredients and produce very different dishes.

Where to Buy Djon Djon Mushrooms

Dried Djon Djon mushrooms can be difficult to find outside areas with Haitian or Caribbean markets. If you don’t have a local source, they are also available online. I recommend looking for whole dried Djon Djon mushrooms so you can prepare the traditional mushroom broth used in Haitian cooking.

More Than Haitian Black Rice

Diri Djon Djon will probably always be the dish most closely associated with these treasured Haitian mushrooms, and for good reason. But Djon Djon deserves to be understood as an ingredient, not simply as a type of rice.

Its earthy, savory character can bring depth to poultry, seafood, sauces, grains, compound butter, and even fusion dishes. Start with traditional Haitian Diri Djon Djon to understand the ingredient. Then experiment.

That’s where you begin to see just how versatile Djon Djon can be.
