What are kitchen scraps? 

So, it’s almost dinner time, and I decide to make roasted chicken wings, cucumber salad, shredded carrots with raisins, and rice with fresh herbs. Besides cleaning the chicken wings with lemon juice or vinegar, I also like to remove the tips.

For me, the tips of the wings are not delicious. I prefer to save them for a homemade stock – hence make stock.

Scraps include leftover veggies or fresh herbs you are not using in your recipes. These vegetables or fresh herbs have flavor and aroma. With a good wash under running water, you can use them in your stock.

  • Chicken (meat and bones)
  • Onions
  • Garlic
  • Carrots
  • Celery
  • Black Peppercorns
  • Whole cloves
  • Salt
  • Bouquet garni (parsley, thyme, bay leaf) or Herbs de Provence
  • Water
