The ingredients needed to make this Simple Green Salad. 

  • Romaine Hearts Lettuce: one or two heads of lettuce are needed for 2 – 4 people. 
  • English Cucumber: buy one that is firm to the touch. 
  • Green Apple: one apple is needed for two servings. Adjust the quantity according to the number of servings.
  • Watercress: This ingredient is located in the vegetable area of your supermarket. 
  • Scallion: It is always best to buy scallion in a bunch because you can save and use them in other dishes and prepare your Epis (green seasoning).
  • Parsley: I use fresh parsley in most of my dishes and salads.

The salad dressing

The dressing for this salad works well with the zesty taste of the scallion and the sweet and tart taste of the green apple. I think these two ingredients add so much flavor that you might need only to add some crunchiness or sweetness. You can also try my lemon Easy Lemon Vinaigrette or my Greek Salad Dressing

How to make this salad

  • When preparing your salad, and serving it with a homemade dressing, make sure you make the dressing first. 
  • Wash the greens and herbs and dry well. A towel paper is perfect for drying herbs. For the romaine lettuce and watercress, a salad spinner is perfect. Add the greens to a large bowl.
  • Wash the cucumber. Use a vegetable peeler to peel the cucumber. You can either remove the seedy core with a spoon or leave it. Add it to the salad. 
  • Wash the apple and either slice it thin or in chunks. Add it to the salad.
  • Toss gently to mix all the ingredients. Drizzle the dressing over the salad when ready to serve.

How to customize this salad

 I love a good salad that contains scallion and watercress. Let’s go through a few ingredients that may take this salad to another level. 

  • Roasted Beets: try my recipe for roasted beets. It is super easy and super delicious. 
  • Cucumbers: English cucumbers or mini cucumbers are much better than regular cucumbers. The seeds are softer and smaller. 
  • Carrots: shredded might be best. You can also use your vegetable peeler to 
  • Cheese: Sharp cheese is a good choice for this salad.  
  • Other green leafy vegetables such as Kale, Arugula, Spinach
  • Other fresh herbs such as Tarragon, Basil, Mint, Dill, Chive, Cilantro

  • Hard-Boiled eggs: a common ingredient in salad, it adds both texture and flavor.

Notes and tips to make this easy green salad

  • Buy everything fresh as the salad will be tastier and fresher.
  • Thoroughly wash the vegetables and dry them well. 
  • When ready to serve the salad, drizzle the dressing and toss gently. Add the appropriate amount of dressing; do not over-drench the salad in dressing. The salad will not be tasty to the eyes and the palate. 
  • Don’t forget to season the dressing. Salt and pepper are usually the common ingredients; garlic is a fragrant vegetable that adds beautiful flavors to salad dressing. 
  • Balance out the acidity of the dressing with honey, agave, or maple syrup. 
  • Wash and slice the cucumber
  • Wash and cut the apple
  • Add other ingredients and gently toss
  • Drizzle the salad dressing over the other ingredients and gently toss when ready to serve.

Ingredients
  

  • 2 Hearts of Romaine Lettuce
  • 1 cup watercress
  • 1 Scallion sliced thin

  • 2 tbsp fresh parsley chopped

Ingredients for the salad dressing

  • 1 lemon juiced
  • 1 tbsp balsamic vinegar white or red balsamic vinegar
  • 2 tbsp olive oil
  • 1 garlic clove crushed
  • Salt and pepper to taste

Instructions

  • In a small bowl or a jar, add the juice of lemon, balsamic vinegar, oil, crushed garlic, a pinch of salt, and black pepper. Shake or stir vigorously until well combined.
