This recipe will use Noubess Baharat Seasoning with fresh garlic and lemon slices. This particular spice blend is very fragrant and has a strong flavor profile.

Only five ingredients are needed for this flavorful recipe.

  • Bone-in Chicken Thighs: you can make this recipe with chicken legs or boneless thighs. My preference is bone-in thighs; they are more flavorful, in my opinion.
  • Noubess Baharat Seasoning: a superb spice blend you will want to season most of your chicken recipes.
  • Lemons: fresh lemon slices to elevate the spice blend and its smoky flavor.
  • Garlic Cloves: lots of them! You can never have too many garlic cloves. The garlic cloves are roasted with the chicken thighs delivering an earthy flavor.
  • Olive Oil: regular olive oil will do. It is also best to roast chicken with olive oil.

How to make Baharat Chicken Thighs

  1. Clean the chicken thighs your preferred way, create a water bath with vinegar, and quickly rinse the chicken pieces—Pat dry with paper towels and place in a clean bowl.
  2. Add Noubess Baharat Seasoning, garlic, lemon slices, and oil. Add salt if using (adding salt may not be necessary depending on your taste buds and diet).  
  3. Let marinate for at least 1 hour. (overnight for optimal flavor)
  4. Roast the chicken thighs until golden brown and the juices run clear when pierced with a knife, 40 to 50 minutes.
  5. Serve with rice, couscous, or other types of grains.

  • Let the chicken marinate for at least 3 hours or overnight for the best result.
  • Usually, baked bone-in chicken thighs require about 35 minutes of baking at a high temperature (425F – 450F). Always bake your chicken until the juices run clear and there is no pink on the bone. Boneless skinless chicken thighs will require about 10 minutes less time. Below is some helpful information about roasting the chicken.
    • Chicken Thighs Bone-in at 350°F – 50-55 minutes
    • Chicken Thighs Bone-in at 375°F – 45-50 minutes
