What you need to make Banana Fritters

For starters, there is no yeast or baking soda in these fritters. You will need the following ingredients:

  • Bananas: ripe bananas are best, but don’t worry. You can use them as long as they are soft enough to mash.
  • Vanilla Extract: get a good extract for some yumminess. Don’t forget that you can make your own.
  • Ground Cinnamon: for a slightly citrus and a spicy note.
  • Ground Nutmeg: for a slightly nutty and sweet flavor.
  • Ginger Powder: for a slightly peppery and sweet flavor.
  • Brown Sugar: you can use white sugar, but in the Caribbean, from what I remember from my childhood, brown sugar was the way to go. You can use either dark or light brown sugar. Depending on your sugar type and color, the fritters will be lighter or darker in color.
  • Salt – just a pinch is needed. The salt will help balance the flavors of all the ingredients.
  • All-Purpose Flour: I always use a good flour brand for baking and cooking.
  • Vegetable oil- for frying the fritters

How to make the Fritters

To make the fritters you will need a few kitchen tools. You will need:

  • Bowls
  • Fork or Potato Masher
  • Spoon or Spatula
  • Measuring Spoons
  • Measuring Cups
  • Mesh Strainer or Flour Sifter
  • Skillet or Frying Pan
  • Slotted Spatula

The instructions to make the banana fritters

  • Peel the bananas and place them in a bowl. 
  • Using a fork or potato masher, thoroughly mash the bananas 
  • Add brown sugar, vanilla extract, cinnamon, nutmeg, ginger, and a pinch of salt and mix to combine.
  • Sift in the flour and stir with a spoon or spatula until thoroughly combined.
  • Add oil to a skillet over medium-high heat. Drop spoonfuls of the batter into the hot oil. Once one side is golden, and the top has a few bubbles, gently flip the fritter with the spatula and cook until the other side is browned.
  • Remove the banana fritters and drain them on paper towels before serving. 
  • Serve with fresh fruits, yogurt, or powdered sugar.

Notes and Tips

  • Use ripe bananas for a sweeter natural taste.
  • If using tiny bananas, use twice the number.
  • Best to use a nonstick skillet but not necessary.
  • Use a slotted spatula or slotted spoon when removing the fritters from the oil. This will allow the oil to drain better back into the pan.
  • Use fresh vegetable oil to fry the banana fritters.
  • For a different and “grown-up” taste, add dark rum, preferably Rum Barbancourt (Haitian Rum).
