Easy Garlic Chicken Recipe
This Garlic Chicken recipe is one of my favorite recipes to make for a lovely Sunday dinner. It’s a classic, and you can use it to test your cooking skills when your friends ask you to serve it with Rice with Djon Djon. A superb pairing!

One of my favorite ways to make this dish is with cutup chicken. This way, there is more portion to serve, and I can save the leftover for another. Or better yet, use only enough portions I need to make this meal and save the remaining cutup chicken for another dish.

- Fresh garlic cloves: the recipe is better with fresh garlic instead of garlic powder.

- Fresh parsley, fresh chives, or scallion greens to mix at the end of the dish to elevate the taste to another level – fresh and delicious.

How to cook the Garlic Chicken
Start by lightly mashing and cutting the larger garlic cloves. Next, season the cleaned chicken with salt and pepper. Next, heat the oil in the pan, cook the garlic, add the chicken and cook until. The next step includes making the sauce and cooking the chicken until thoroughly cooked. Serve with a salad, boiled plantains or potatoes, or even a side of rice, polenta, or bulgur wheat—a healthy dinner to cook for your family.

- Fresh Garlic: you will need about two heads; don’t let the cloves burn.
- Wine: I recommend using white wine over red wine because it will taste better. But if you prefer red wine, then use it. You can also use apple juice if you don’t have white wine. You will be left with a very mild acidic flavor.
- Fresh Lemon juice: if you use apple juice, you may want to add a few drops of lemon juice to complete the dish’s flavor profile.
- It is best to use a nonstick pan to brown the chicken pieces.

Easy Garlic Chicken Recipe
Ingredients
- 2 heads garlic cloves separated
- 2 1/2 pounds chicken cutup pieces, drumsticks, thighs, or chicken breast
- 1/2 teaspoon salt divided
- 1/2 teaspoon freshly ground pepper
- 3 tablespoons extra-virgin olive oil
- ⅓ cup dry white wine or apple juice
- 1 cup low-sodium chicken broth
- 2 ¼ teaspoons Dijon mustard
- 2 teaspoons all-purpose flour
- Additional salt and pepper to taste
- Lemon Juice optional
- 1/3 cup chopped fresh parsley fresh chives, or scallion greens
Instructions
- Clean the chicken pieces your preferred way. Thoroughly pat dry the chicken pieces with paper towels.
- Lightly smash the garlic cloves with the side of a large knife to loosen the skins. Remove the peel and cut larger garlic cloves in half or third.
- Season the chicken pieces with salt and ground pepper.
- Heat the oil in a large nonstick skillet over medium heat. Add the garlic cloves and cook, stirring, until slightly brown, about 2 minutes. Remove front the oil and set aside on a plate.
- Add chicken pieces to the pan and cook until browned on all sides if possible. You may have to brown the chicken pieces in batches.
- Return the garlic to the pan with the chicken. Add wine/apple juice and cook for about 2 minutes.
- In a bowl, whisk together about ¼ cup of the broth, mustard, flour. Add the remaining broth and mix completely.
- Add the mixture to the pan; bring to a boil, adjust the taste (add a few drops of lemon juice if needed), and then reduce the heat to maintain a simmer. Cover and cook until the chicken is cooked through, 8 to 10 minutes. Serve sprinkled with parsley, chives, or scallion.
