Ingredients
  

  • bundle of beet greens
  • 1 cup water
  • 1 1/2 tablespoon olive oil
  • 2 cloves garlic
  • 2 shallots sliced
  • ½ lemon juice
  • Salt & pepper to taste

Instructions
 

  • Separate the stems from the leaves, wash them separately, and set them aside. (you may have to wash the stems several times as they may be a bit muddy)
  • Cut stems into 1- 2″ pieces. Chop the leaves into pieces.
  • Place cleaned stems in a large non-stick pan with 1 cup of water. Cover and simmer for 7-9 minutes or until fork tender.
  • Drain the water from the cooked steams. Add olive oil, garlic, and shallots.
  • Add the greens and season with salt and peppers. Squeeze the lemon over the greens as well. Sautee for 2-3 minutes or until the greens are wilted.
  • Remove from heat and serve warm.
