My Garlic Roasted Carrots recipe is made with Gourmet Baby Carrots which are found mostly in large supermarket chains, farmer’s markets and large food distributors like Costco and Bj’s Wholesale. With Costco and Bj’s you are sure to spend less money and have more carrots than you need. The Gourmet Carrots are sold at my Bj’s location in pack of 2s and each pack has about 1 pound of carrots which is great for a family or 4 to 6 people.

- 1- pound gourmet baby carrots
- 2 tablespoons olive oil or grapeseed oil
- 1 tablespoon fig vinegar
- 4 cloves garlic minced
- 1 teaspoon Herbes de Provence Mrs. Dash (original) or Italian seasoning
- Salt and freshly ground black pepper to taste (Himalaya salt or Kosher salt)
