Flavorful and Crunchy Garlic Roasted Carrots

I have been wanting to share My Garlic Roasted Carrots recipe for a long time. The reason why it has taken me so long is because I am a vegetable stew girl. LOL… Yes, I like stews and roasted mixed vegetables. Roasting one type of vegetables is sometime boring for me. And to tell you the truth, I think you spend more time in the kitchen cooking. Not that I am complaining but cooking one type of vegetable at a time takes longer than if you were to cook a nice veggie medley dish.

My Garlic Roasted Carrots recipe is made with Gourmet Baby Carrots which are found mostly in large supermarket chains, farmer’s markets and large food distributors like Costco and Bj’s Wholesale. With Costco and Bj’s you are sure to spend less money and have more carrots than you need. The Gourmet Carrots are sold at my Bj’s location in pack of 2s and each pack has about 1 pound of carrots which is great for a family or 4 to 6 people.

Carrots, as you might already know, has many great health benefits. A few of those benefits are, improves vision, promotes healthier skin, prevents heart disease and cleanses the body. All the great things we care about. There are many ways you can incorporate carrots into your diet. Carrots can be juiced, roasted, grilled, boiled, etc.… I have found this wonderful way to cut corners. My Garlic Roasted Carrots may be a bit garlicky for some and may not for others.

A great way to bring out flavors in a vegetable is to season it with herbs. I find this process not only practical but also a great way to save on your food budget. Who needs to have lots of fancy ingredients in a pantry? I have to admit that I am a culprit. But I buy ingredients for multi purposes and if you do the same and plan your food budget according to your meal planning, you will be stress free.

My Garlic Roasted Carrots can be made with Herbes de Provence, Mrs. Dash or Italian seasoning, great seasoning to have in your pantry. Anyone of these spices mix will deliver lots of great flavors. The best part about this recipe is the crunchiness of the carrots which is achieved by roasting them at the right temperature.

Flavorful and Crunchy Garlic Roasted Carrots prepared with gourmet baby carrots and flavorful spices.

Cook Time 40 minutes
Total Time 45 minutes

Ingredients
  

  • 1- pound gourmet baby carrots
  • 2 tablespoons olive oil or grapeseed oil
  • 1 tablespoon fig vinegar
  • 4 cloves garlic minced
  • 1 teaspoon Herbes de Provence Mrs. Dash (original) or Italian seasoning
  • Salt and freshly ground black pepper to taste (Himalaya salt or Kosher salt)

Instructions
 

  • Preheat oven to 375 degrees F. In a mix all ingredients except the carrots.

  • Gently toss the carrots and the oil and spice mixture

  • Place carrots in a single layer onto a nonstick baking sheet.

  • Place into oven and bake for 35-40 minutes, or until tender and still crunchy.
