Hot and Spicy Pineapple is a quick recipe to help add a little spice to your roasted poultry or meat dish. This recipe is almost like a salsa but it is not. It is similar to a salad. This recipe contains only pineapple with garlic, onion or shallots, lemon juice, salt, pepper and hot pepper. You can use habanero or Scotch bonnet pepper.
The Scotch bonnet adds a lovely taste and aromatic smell compared to other hot peppers. By the way, although the hot pepper may be a little too hot, just the mixture of sweet, sour and spicy hot is out of this world.
If you are someone who loves to try anything, you might love this even with your grilled meat. This is the perfect recipe to indulge in a sweet, sour and hot taste.
I did something really adventurous because I was craving ice cream and yes, I did. I used the Hot and Spicy Pineapple as a topping. Now, that was totally wicked and fun to do! I don’t advise anyone to try it with ice cream, but hey? If you are adventurous and like pineapple, hot pepper and ice cream, why not try it.
Have plenty of leftover pineapple? Cut the pieces in cubes if they are large, add the spices, let marinate for a few minutes, and you are done. You have a fruity and delicious dish made with pineapple. If you do not have fresh pineapple, you can also canned pineapple – not the same taste but it will suffice.
Hot and Spicy Pineapple
- 4 cups pineapple chunks fresh or canned
- Juice of ½ of a lemon
- 2 garlic cloves chopped finely
- 1 tablespoon white onions chopped finely or 2 shallots
- Salt and pepper to taste
- ¼ teaspoon hot pepper habanero or scotch bonnet thinly sliced
- In a large bowl, mix all ingredients together. Let marinate for at least 10 – 15 before serving with ham, grilled meat or anything else you prefer.
