Nuts, protein (poultry, seafood, or red meat), and fruits are the best ingredients to dress your salads. I mostly use Cashew nuts because they are softer and are slightly sweet. I mostly add roasted or grilled chicken breast because I find seafood and red meat too overpowering for the taste of the kale leaves. For fruits, I prefer apples and dried cranberries. I think they go so well with the taste of kale.
For salad dressing, these days I like to use salt and pepper and a drizzle of Noubess Lemon Sorrento Infused Extra-olive Oil. I find the combination quite good and I can taste every ingredient as they are dredged with a creamy salad dressing. Just simple!
