I may need help today. Not sure what to bake for Sunday. I have made these two cakes several times and today it is just a day of confusion. One great tip I have to share with you is that you cannot be cheap with the ingredients. The more organic you are the better it is. For example, organic sugar is a must have for a delicious, sweet and light cake. And I am not kidding! Try it.

My banana cake recipe can be a miss or hit. I have to say that I am not an avid baker but I am slowly trying to be less adventurous when baking in my kitchen. For the bananas, if you wish to use organic bananas, you are more than welcome to use them but they don’t really make much difference in taste. As far as flour, I always use King Arthur’s Flour. Why? Because I trust the brand. This is not an advertisement for King Arthur. I just think it gives me the results I am looking for. For the other ingredients, I think you can go with your own taste, preference and make sure that everything is fresh.

As far as the Plum and Muscat Wine Cake, delicious!!! What else can I say? If you trust me you will not be afraid at following my advice. So, here we go! The plums, must be fresh and firm. If you can find organic, go ahead. The big question is the Muscat Wine. Trust me when I say this, all muscat wines are not the same. The darker the better, the more expensive of course because of aging. What you can afford will be good enough but a little indulgence will not hurt. Is it such a delicious cake that you will want to make it more often!

So there is one ingredient I did not talk about. Butter!!! If anyone tells you that butter is butter, stay away from them. Try tasting different types and brands of butter. They are not the same. Trust me on this! A good butter make a great dish. Buy a brand you trust, you love and can afford. One last item! Vanilla Extract!

I have been told that we “Haitian” makes the best vanilla extract. I agree because it fills up any of my baking goods with aromatic flavors. And disagree, because quite frankly I don’t know. I think you can buy what you prefer but it is extremely important to purchase a good vanilla extract. I was told that it was compared to the one made by Kirkland, the same owner for BJ’s Wholesales. It was a winner! Who would of thought!
