Sweet, Tangy, and Delicious Mango Chicken

Mango Chicken

Mango Chicken just sounds sooo good! Have you ever craved a sweet and savory combination for your chicken dish, something that tantalizes your taste buds without being overpowering? If so, you’re not alone! The way we enjoy chicken has evolved, and the introduction of mango takes it to a whole new level.

Now, some mornings, we wake up knowing exactly what we want for dinner. But others, we stand before the open fridge, hoping for culinary inspiration. That’s how my Mango Chicken adventure began.

While I don’t cook meat often, mangoes hold a special place in my heart. They pair beautifully with different meats, usually as part of a salsa topping. But this time, I wanted to explore the magic of cooked mango and chicken. The result? A symphony of sweet, tangy, and salty flavors that had me hooked.

From Inspiration to Creation: Cooking Up Mango Chicken

My journey started with marinating chicken legs in a vibrant mix of onions, garlic, hoisin sauce, black pepper, champagne vinegar, and fleur de sel. These ingredients might not be pantry staples, but trust me, they unlock a world of flavor and can be used in countless other dishes.

Overnight marinating was key – the chicken absorbed the flavors beautifully. Baking was my choice, avoiding the pan-frying or roasting route for practicality. However, the real revelation came with cooking the marinade and mango together. This simple step elevated the dish, and for those without fresh mangoes, mango chutney could be a sweet substitute (be mindful of potential sweetness overload!).

Tips and Tricks to Mango Mania

Remember, the beauty of cooking lies in experimenting! Here are some tips for your Mango Chicken adventure:

  • Vinegar Variations: Swap the mild champagne vinegar for rice vinegar if you prefer.
  • Salt Savvy: Fleur de sel adds a unique touch, but feel free to substitute with sea salt or kosher salt, keeping in mind their distinct flavors.
  • Sweetness Control: Mango chutney can be an alternative, but adjust the sugar content to your liking.

The Recipe Unwrapped: Ready to Savor?

Now, let’s get cooking! Here’s the recipe for your Mango Chicken escapade:

The ingredients in the Mango Chicken recipe can be broadly categorized into:

For the Chicken:

  • Protein: 4 chicken legs or thighs – These provide the base of the dish and absorb the flavors of the marinade.
  • Aromatics: ½ cup chopped onions and 1 tablespoon garlic hoisin sauce – These add depth and complexity to the marinade and overall flavor.
  • Seasonings: ¼ teaspoon freshly ground black pepper, 2 tablespoons champagne vinegar, and ½ teaspoon fleur de sel – These provide various layers of spice and tang, balanced by the mild champagne vinegar.

For the Mango Sauce:

  • Sweetness: 1 cup cubed mango (about 1 large mango) – This is the star ingredient, delivering the sweet and slightly tart mango flavor.
  • Fat: 1 tablespoon unsalted butter – This helps add richness and smoothness to the sauce.
  • Seasonings: Salt to taste and optional habanero hot sauce – These balance the sweetness of the mango and add a kick of heat, if desired.

Additional Notes:

  • The recipe mentions that champagne vinegar and fleur de sel can be substituted with rice vinegar and sea salt/kosher salt, respectively. However, this will slightly alter the final flavor profile.
  • Feel free to adjust the amount of black pepper and hot sauce to your desired level of spiciness.

I hope this detailed description helps you understand the role of each ingredient in the Mango Chicken recipe!

Ingredients

  • 4 pieces chicken legs or thighs
  • ½ cup onions chopped
  • 1 tablespoon garlic hoisin sauce store bought
  • ¼ teaspoon freshly ground black pepper and more to taste
  • 2 tablespoons champagne vinegar
  • ½ teaspoon fleur de sel
  • 1 tablespoon unsalted butter
  • 1 cup mango cubed, about 1 large mango
  • salt to taste

Instructions

  • Clean chicken pieces with vinegar/lemon juice, rinse with water, and pat dry. Marinate chicken with onion, garlic hoisin sauce, ground black pepper, champagne, and salt for at least 1 hour or overnight. Remove chicken from marinade (save marinade for later) and bake 20 minutes on a baking dish at 400°F . Turn chicken pieces over and continue baking for another 20 minutes.
  • In a saucepan, add unsalted butter and marinade. Cook mixture for 3 – 4 minutes while stirring. Add mango cubes and cook for 6 – 8 minutes stirring occasionally. Add 4 tablespoons of sauce from baked chicken pieces or add 4 tablespoons of water. Season with salt and pepper to taste and add habanero hot sauce at the end if using. Place chicken pieces on a platter and pour mango sauce and serve hot with rice or any other types of grains.

Notes

I used champagne vinegar because of its mild taste and fleur de sel because of flavoring. These two ingredients can be substituted but you won’t have the same result in taste. You many want to use a mild vinegar such as Rice Vinegar. You may substitute Fleur de Sel with Sea Salt of Kosher Salt. Each type of salt has different taste — keep that in mind.
