  • Cabbage: green cabbage is the preferred choice. It is best to buy a medium-sized cabbage if cooking for 4 – 6 people.
  • Extra-Virgin Olive oil: I have used regular olive oil, but I think extra-virgin olive oil tastes better with roasted vegetables. You can also use coconut oil or sunflower oil.
  • Spices: NouBess Steak Seasoning, Salt-Free, and adding salt is an option. The steak seasoning does provide a nice kick to the crispy leaves. Not too spicy, just the right amount of flavoring.
  • Salt: this is optional. NouBess steak seasoning does not contain salt, and adding it is optional. The Cabbage Steaks will still taste delicious without salt if you’re wondering.

How to make the Roasted Cabbage Steaks

  1. Adjust the oven rack to the middle position and preheat the oven to 425°F. If you prefer, line a rimmed baking sheet with aluminum foil or parchment paper – ultimately, prepare a baking sheet pan by spraying it with cooking spray.
  2. Arrange the cabbage wedges on a baking sheet in a single layer. Drizzle olive oil on one side, then season with Noubess Steak Seasoning. Flip the wedges, drizzle the other side with oil, and season with steak seasoning. Season the cakes also with salt if using.
  3. Place the baking sheet in the oven and roast until lightly browned, about 15 minutes. Flip wedges and continue roasting until tender and browned for another 15 minutes, then serve. The cooked wedges will be crispy and tender.

Notes and Tips

  • Do not slice the cabbage wedges too thin, or you will end up with burnt wedges.
  • Spread the wedges apart so they cook evenly.
  • If you like overcooked cabbage, add another 10 minutes to the cooking time. But be careful that the wedges don’t burn as the oven is at a high temperature.
  • To store, place the cooled cabbage wedges into an airtight container and refrigerate for up to 3 days.
  • To reheat, warm the cabbage wedges on a baking sheet in a 350°F oven until they reach the desired temperature.
  • I would not suggest microwaving them as some moisture will be lost.
  • Roasted Cabbage does not freeze well in the freezer. The cabbage steaks will fall apart and will not look presentable. You may use them to make a cabbage stew.
  • Store in the refrigerator for up to 3 days. Cabbage tends to smell after a while.
