- 1 pound sweet potatoes peeled and cut into 1″ pieces
- 1 pound smoked sausage cut into ½” slices
- 3 shallots sliced
- 2 clove garlic minced
- 3 tbsp olive oil plus more if necessary
- 1 ½ tbsp Za’atar Seasoning

- Preheat oven to 425°F.
- In a bowl, combine olive oil, Za’atar Seasoning, and garlic.
