Ingredients
  

  • 1 pound French Green Beans / Haricot Verts already trimmed, and cut in half if they are too long
  • 1 pound sweet potatoes peeled and cut into 1″ pieces
  • 1 pound smoked sausage cut into ½” slices
  • 3 shallots sliced
  • 2 clove garlic minced
  • 3 tbsp olive oil plus more if necessary
  • 1 ½ tbsp Za’atar Seasoning

Instructions
 

  • Preheat oven to 425°F.
  • In a bowl, combine olive oil, Za’atar Seasoning, and garlic.
  • Toss French green beans, potatoes, sausages, and shallots with the seasoning mixture. Season to taste with salt and pepper.
  • Place the vegetable mixture in the large baking pan spreading the ingredients into one layer.
  • Roast for 30-35 minutes or until the vegetables are tender and the beans are still crispy.
  • Optional: set oven to broil. Continue roasting on broil for 5 minutes.
