Ingredients

  • 10 Jumbo Shrimp cleaned and deveined
  • 1 teaspoon Unsalted Butter
  • 1 teaspoon Olive Oil
  • 1 tablespoon Garlic fresh and minced
  • 2 medium Shallots sliced
  • 1 teaspoon Chives chopped
  • 3/4 cups Lima Beans frozen and thawed
  • 2 – 3 dashes Black Lava Sea Salt or regular sea salt
  • dash of Crushed Hot Pepper Flakes
  • 1/8 teaspoon Ground Black Pepper
  • juice of 1 Lemon
  • 1 – 2 tablespoon Water

Instructions

  • Prep the Shrimp: Clean and devein the shrimp, removing the shells and veins. Rinse them with cold water mixed with a splash of lime, lemon, or vinegar, then rinse again with cold water and pat dry.
  • Cook the Aromatics: Heat the butter and oil in a frying pan over medium heat. Add the garlic, shallots, and chives, and cook until fragrant for about 1 minute, stirring occasionally.
  • Add the Beans and Seasonings: Stir in the thawed lima beans, black lava sea salt (or regular sea salt), crushed hot pepper flakes, and black pepper. Cook for another minute, allowing the flavors to meld.
  • Cook the Shrimp: Add the shrimp to the pan and cook for 2-3 minutes per side, or until they turn pink and opaque, stirring occasionally. Avoid overcooking to prevent rubbery shrimp.
  • Finish the Dish: Squeeze in the lemon juice and add 1 tablespoon of water. Scrape up any browned bits from the bottom of the pan. If the shrimp aren't fully cooked, add another tablespoon of water and cook for another minute or two.
  • Serve: Divide the cooked grits among plates and top with the shrimp and lima bean mixture. Garnish with additional chives or fresh herbs, if desired.

Notes

  • Adjust the amount of hot pepper flakes based on your desired spice level.
  • You can substitute frozen baby lima beans if you can’t find frozen regular lima beans.
  • If you don’t have black lava sea salt, regular sea salt will work just fine.
  • Serve with your favorite hot sauce for an extra kick.
  • For a vegetarian option, omit the shrimp and add roasted vegetables like bell peppers, zucchini, or asparagus.
