- 1 lb pasta small shaped pasta preferably
- ½ cup green peppers diced small
- ½ cup sweet red peppers diced small
- ¼ cup extra virgin olive oil
- 1/3 cup onions or Shallot or Scallion. Diced small
- salt to taste
- pepper to taste
- 1 teaspoon italian seasoning
- Boil Pasta according to instructions on box. Drain pasta and set aside. In a small bowl, mix oil, spices, green and red peppers and onion/shallot/scallion. Stir in the oil mixture into the pasta and make sure everything is well incorporated. Let flavors marinate for a few minutes before serving. Serve at room temperature.
