Ingredients for the Spicy Roasted Chicken Wings

  • Chicken wings: separated at the joints, or if possible, buy chicken wings already cut in half. If not, you must remove the tips first and cut the wing at the joint to split the drummette from the wingette.
  • Vinegar: use white vinegar to clean the wings.
  • Italian Seasoning: used for seasoning.
  • Olive oil: add for moisture and flavor. You can also use canola oil, coconut oil, or grapeseed oil.
  • Salt: to taste
  • Garlic powder: used for seasoning and flavor.
  • Ground cumin: this spice is very flavorful; be careful not to add too much. The taste will be ruined.
  • Pikliz: this is a mixture of pickled vegetables and one of the most favorite condiments to enjoy with Haitian Griot.
  • Ground Black pepper: for seasoning and flavor.

To make the basting sauce

  • Honey: to tone down the spiciness and add a sweet flavor.
  • NouBess Hot and Spicy Sauce: for a spicy and delicious kick.
  • Dijon mustard: to balance and seal the flavor into the wings.
  • Seasoned Rice Vinegar or regular Rice Vinegar: for more flavor and aroma.
  • Salt to taste

How to make The Spicy Roasted Chicken Wings

  1. Cut the chicken wings in thirds, cutting between the bones. Discard the wing tips. Wash wings with vinegar and water. Pat dry, add to bowl with the seasoning and marinate for at least 30 minutes or longer.
  2. Preheat oven to 425 degrees. Remove the wings from the marinade and put the wings on a prepared sheet pan. Bake for 30 minutes. Turn wings over and bake for 10 – 15 more minutes or until crispy and done.
  3. For the sauce, mix all ingredients. Coat wings with sauce and return to oven for an additional 5 minutes.
  4. Serve the chicken wings hot or at room temperature with your preferred side dish or Sweet Fried Plantains and String Beans with tomato and Apples.

Notes and Tips

  • For extra crispy wings, increase the baking time to 45 minutes.
  • To make the wings, bake them according to the instructions, then let them cool completely. Store them in an airtight container in the refrigerator for up to 3 days. When ready to serve, reheat them in a hot oven or air fryer until heated.
