This recipe is the easiest way to make almond macaroons at home. It uses almond paste, which is a type of almond flour that is already ground and mixed with sugar and other flavorings. This makes it much easier to make the dough, and it also gives the macaroons a more intense almond flavor.

During the holidays, we can get so caught up in the hustle and bustle that we forget to enjoy the season. But baking is a great way to slow down, relax, and create memories with loved ones. And these easy almond macaroons are the perfect recipe to get you started.

This recipe is so simple, even kids can help. All you need is almond paste, egg whites, and sugar. And the best part is, these macaroons are always a crowd-pleaser.

What is Almond Paste?

Almond paste is a sweet, nutty confection made from ground almonds, sugar, and sometimes other flavorings like almond extract or rose water. It has a coarse, slightly grainy texture and a rich almond flavor. Almond paste is often used as a filling for pastries, cookies, and cakes, or it can be rolled out and used to make marzipan-like decorations.

Key characteristics of almond paste:

  • Almond flavor: Almond paste is characterized by its strong almond flavor, which comes from the high proportion of ground almonds in the ingredient.
  • Coarse texture: Almond paste has a coarser texture than marzipan, due to the larger almond particles. It is not smooth enough to be used for marzipan-like decorations, but it adds a delightful texture to pastries and cakes.
  • Sweetness: Almond paste is moderately sweet, but it is not as sweet as marzipan. This makes it a versatile ingredient that can be used in a variety of desserts.

Uses of almond paste:

  • Filling for pastries and cakes: Almond paste is a popular filling for pastries like croissants and danishes, as well as cakes like frangipane tarts. It adds a rich almond flavor and moistness to the desserts.
  • Ingredient in cookies and muffins: Almond paste can be crumbled or grated and added to cookie dough or muffin batter for a nutty flavor and chewy texture.
  • Base for marzipan: Almond paste can be combined with additional sugar and egg whites to make marzipan, a smooth, pliable confection used for modeling and decorating.

Comparison to marzipan:

Almond paste and marzipan are both almond-based confections, but they have some notable differences:

  • Almond content: Almond paste has a higher proportion of ground almonds than marzipan, giving it a coarser texture and a stronger almond flavor.
  • Texture: Almond paste has a coarse, grainy texture, while marzipan is smooth and pliable.
  • Sweetness: Almond paste is less sweet than marzipan due to the lower amount of sugar.

Overall, almond paste is a versatile and flavorful ingredient that can add a touch of almond goodness to a variety of desserts.
