Boil eggs for 10 minutes. Drain off the hot water and run plenty of cold water other them, so that they stop cooking at once. Remove shell and cut the top of each egg - about 1/4 off the top. Carefully remove the yolks and place in a bowl. Combine egg yolks, mayonnaise and mustard to obtain a smooth paste. Season with salt and pepper. Cut the base of the whites horizontally, so that they can stand upright. Fill the whites wit the yolk mixture. Wrap eggs with smoked salmon strips and serve on a bed of lettuce.
