Simple Pasta Salad

Ingredients
  

  • 1 lb pasta small shaped pasta preferably
  • ½ cup green peppers diced small
  • ½ cup sweet red peppers diced small
  • ¼ cup extra virgin olive oil
  • 1/3 cup onions or Shallot or Scallion. Diced small
  • salt to taste
  • pepper to taste
  • 1 teaspoon italian seasoning

Instructions
 

  • Boil Pasta according to instructions on box. Drain pasta and set aside. In a small bowl, mix oil, spices, green and red peppers and onion/shallot/scallion. Stir in the oil mixture into the pasta and make sure everything is well incorporated. Let flavors marinate for a few minutes before serving. Serve at room temperature.
