Sautéed String Beans with Shiitake Mushroom is an Asian inspired dish because of the use of soy sauce. Quick and simple, it provides the perfect blend of veggies for a side dish. A low sodium soy sauce is the preferred choice to make this dish. No need to add extra salt. Just a dash of freshly ground pepper to finish it and voila! 1cupor 8 oz bag Green Beansends trimmed, cut in 1 - 2 inch pieces
1cupShiitake Mushroomsliced
1tablespoonFresh Parsleychopped
1/4cupRed Bell Pepperjulienned
1small Red Onionthinly sliced
2tablespoonsSoy Sauce
1/2teaspoonFreshly Ground Black Pepper
Instructions
In a frying pan, add grapeseed oil. Add garlic and string beans. Cook for about 3- 4 minutes until beans are cooked but still crispy. Add mushroom, parsley, bell pepper, onion and soy sauce. Cook for another 3 - 4 minutes and add black pepper. Stir to blend. Additional seasoning to taste. Serve immediately. Note: Sauteed Green Beans with Shiitake Mushroom can be made with French cut beans as well.
