  • 12 garlic cloves
  • 4 scallions chopped
  • 1 large white onion chopped
  • 1 tablespoon ground thyme
  • 1 teaspoon ground cloves
  • 1/2 cup fresh parsley chopped
  • 1 cup fresh marjoram chopped
  • 1/2 cup fresh tarragon chopped
  • 1/2 cup fresh oregano chopped
  • 1/2 cup fresh sage chopped
  • 1/2 cup fresh rosemary chopped
  • 1/2 cup extra virgin olive oil
  • 4 tablespoon kosher salt
  • 2 tablespoons black pepper
  • 1 cup fresh lime juice
  • 1 small habanero or scotch bonnet pepper (seeds and membrane removed if preferred)


  • Clean all fresh herbs and remove excess water. Chopped all herbs. Add all ingredients in a blender of food processor and blend to a smooth paste. Transfer to a clean jar and store in the refrigerator.
