Haitian Meatballs recipeNeed about 12 meatballs for 4 servings
Creole saucerecipe
4ripe sweet plantains
2-3tbsptomato paste
4crushed garlic cloves
2thyme sprigs
2tbspchopped parsley
1medium onionsliced or minced
3 ¾cupof water
2tbspoil
1tbspsugar
Salt and pepper to taste
Instructions
Peel and remove the skin of all sweet plantains and cut lengthwise slices. In a hot skillet, heat oil and fry slices until golden brown and cooked. Remove and place on a prepared dish covered with paper towels to remove some of the oil. Roll each meatball in a slice of fried sweet yellow plantain, and hold with a toothpick. Place in an oven-safe dish, and cover up to ¾ with the tomato sauce. Place in a preheated oven at 350 degrees Fahrenheit for about 30 to 40 minutes, basting occasionally with the tomato sauce. Serve hot.
Tomato Sauce recipe:
Heat oil in a saucepan. Add garlic, tomato paste, thyme, onion and parsley, and let cook. Add the sugar and water and stir to mix. Season to taste with salt and pepper. Let simmer to obtain a thick sauce. Pour sauce over plantains and bake in oven at 350 degrees for about 30 minutes, basting occasionally with the tomato sauce. Serve hot.
Notes
The tomato sauce is very basic. Add additional spices depending on preferred taste.
