  • Creole sauce recipe
  • 4 ripe sweet plantains
  • 2-3 tbsp tomato paste

  • 2 tbsp chopped parsley
  • 1 medium onion sliced or minced
  • 3 ¾ cup of water
  • 2 tbsp oil
  • 1 tbsp sugar

Instructions

  • Peel and remove the skin of all sweet plantains and cut lengthwise slices. In a hot skillet, heat oil and fry slices until golden brown and cooked. Place in an oven-safe dish, and cover up to ¾ with the tomato sauce. Place in a preheated oven at 350 degrees Fahrenheit for about 30 to 40 minutes, basting occasionally with the tomato sauce. Serve hot.

  • Heat oil in a saucepan. Add garlic, tomato paste, thyme, onion and parsley, and let cook. Add the sugar and water and stir to mix. Season to taste with salt and pepper. Let simmer to obtain a thick sauce. Pour sauce over plantains and bake in oven at 350 degrees for about 30 minutes, basting occasionally with the tomato sauce. Serve hot.
