Preheat oven to 400 degrees Fahrenheit. Prepared a baking dish by greasing it with butter or spraying it with Pam and set aside.
Bring a large pot of salted water to a boil. Add macaroni and cook uncovered according to packaging directions. Drain well and set aside.
While macaroni is boiling, in a large skillet melt 1-tablespoon butter over medium heat. Add crushed garlic and onion and sauté until translucent and tender while stirring occasionally about 3 minutes or more. Set aside.
In a saucepan, melt 1-tablespoon butter over medium heat. Stir in enough flour to make a roux. Add milk to roux slowly, stirring constantly. Stir in cheeses, Mrs. Dash seasoning, black pepper to taste and cook over low heat until cheese is melted and the sauce is a little thick. Put macaroni in large casserole dish, and pour sauce over macaroni. Stir well. Pour mixture in baking dish and sprinkle with grated Parmesan cheese and breadcrumbs if preferred.
Bake, uncovered, 30-35 minutes or until golden brown and bubbly.
