Creamy Mac and Cheese

  • 1 pound elbow macaroni
  • 2 tablespoons unsalted butter
  • 1 whole garlic crushed
  • 1 cup white onion finely diced
  • 3 tablespoons all-purpose flour
  • 3 cups milk evaporated milk preferably
  • 8 ounces cream cheese softened
  • 3/4 cup Dutch Gouda shredded
  • ½ cup Parmesan cheese
  • 1 tablespoon Mrs. Dash Seasoning original blend
  • Black pepper to taste


  • Preheat oven to 400 degrees Fahrenheit. Prepared a baking dish by greasing it with butter or spraying it with Pam and set aside.
  • Bring a large pot of salted water to a boil. Add macaroni and cook uncovered according to packaging directions. Drain well and set aside.
  • While macaroni is boiling, in a large skillet melt 1-tablespoon butter over medium heat. Add crushed garlic and onion and sauté until translucent and tender while stirring occasionally about 3 minutes or more. Set aside.
  • In a saucepan, melt 1-tablespoon butter over medium heat. Stir in enough flour to make a roux. Add milk to roux slowly, stirring constantly. Stir in cheeses, Mrs. Dash seasoning, black pepper to taste and cook over low heat until cheese is melted and the sauce is a little thick. Put macaroni in large casserole dish, and pour sauce over macaroni. Stir well. Pour mixture in baking dish and sprinkle with grated Parmesan cheese and breadcrumbs if preferred.
  • Bake, uncovered, 30-35 minutes or until golden brown and bubbly.
