Instructions
Heat the oil in a heavy large frying pan over medium heat. Add turkey and cook while stirring and breaking down the lumps. Once the meat starts to cook, add vinegar or lemon juice and continue to cook while stirring. When the meat has turned brown, add the onion garlic, sage, and thyme and continue to cook for about 5 minutes. Add the carrot, celery, lima beans and cook until the vegetables are tender, about 5 minutes. Add the marinara sauce. Decrease the heat to medium-low and simmer gently for 25 - 30 minutes to allow the flavors to blend, stirring often. Season the sauce, to taste, with the hot sauce, salt and pepper.
Meanwhile, cook the spaghetti in a large pot of boiling salted water or according to the instructions on the packaging. Drain, reserving 1 cup of the cooking liquid. Add the pasta to the sauce and toss to coat, adding enough reserved cooking liquid to moisten as needed. Cook the sauce with the pasta for about 5 minutes before serving. Serve with the grated cheese if preferred.
Notes
Ground turkey can be substitute for ground lamb or ground beef. Cooking time will vary and spices must be adjusted.
