Place ginger, 3/4 cup water and sugar in a blender and puree for 2 - 3 minutes. (time will be much shorter if using a nutrients' extractor or a powerful blender)
Pour 4 cups water in a pot and bring to a boil. Pour ginger mixture into boiling water, turn off heat and place pot on a non heated surface or a trivet. Cover with a clean cloth and let stand to infuse until the mixture is cool. Pass through a fine-mesh sieve and refrigerate if preferred.
Add more sugar before serving if desired.
Use organic sugar, coconut palm sugar or brown sugar.
If using honey or agave, make sure that it is dissolved completely.
