2Tablespoonextra-virgin olive oilsunflower oil or grapeseed oil
Juice of 1 medium lemonabout 2 Tablespoon

Mix all ingredient in a bowl and marinate for 20 minutes in the refrigerator. Prepare grill to medium high heat and grill for 5-6 minutes turning to char all sides. Alternatively, prepare a griddle pan and grill on a stovetop at high heat 5 – 6 minutes and turning to char on all sides.

Place diced tomatoes, shopped red onion, diced avocado, and chopped parsley into a bowl.
Add salt and pepper and drizzle with oil and lemon juice. Toss gently to combine.
Serve immediately with Grilled Shrimp.
You can substitute cilantro or fresh dill for parsley
