Ingredients

  • 2 pounds extra-large shrimp peeled deveined
  • 1 tablespoon sliced fresh garlic
  • 1 tablespoon fresh chopped flat parsley
  • 1 tablespoon fresh lemon juice
  • 2 tablespoons olive oil
  • 1 ?2 teaspoon black pepper
  • Salt to season

  • 3-4 fresh large tomatoes diced
  • Kosher or sea salt
  • 1/2 red onion diced
  • 2 avocados peeled and cut into small bite-sized chunks
  • 1/4 cup chopped fresh parsley
  • 1 garlic clove minced
  • 2 Tablespoon extra-virgin olive oil sunflower oil or grapeseed oil
  • Juice of 1 medium lemon about 2 Tablespoon
  • Freshly ground black pepper

Instructions

  • Mix all ingredient in a bowl and marinate for 20 minutes in the refrigerator. Prepare grill to medium high heat and grill for 5-6 minutes turning to char all sides. Alternatively, prepare a griddle pan and grill on a stovetop at high heat 5 – 6 minutes and turning to char on all sides.

  • Place diced tomatoes, shopped red onion, diced avocado, and chopped parsley into a bowl.
  • Add salt and pepper and drizzle with oil and lemon juice. Toss gently to combine.
  • Serve immediately with Grilled Shrimp.

You can substitute cilantro or fresh dill for parsley
