In a heavy bottom pot, over medium heat, add oil and tomatoes. Let cook while stirring for about 3 - 5 minutes, or just until the tomatoes have started to release their juice. Add garlic, scallion and chicken bouillon or Mrs Dash Original Blend, if using. Keep stirring until spices are cooked but not burnt. Add peas and stir to blend. Let cook for 2-3 minutes. Add rice and stir to blend with spices and peas and let fry for about 3 - 4 minutes stirring gently occasionally. Add water and stir gently again. Add hot pepper and season with salt and pepper. Bring to boil. When the water has almost evaporated, lower heat and cover and continue to cook for about 15 - 20 minutes until rice is fluffy. Discard hot pepper before serving with your favorite meat, seafood or poultry dish
Use lima beans instead of green peas.
Hot pepper should be whole after cooking. It is added for flavor enhancement.
