  • 3 pounds sweet potatoes and white potatoes peeled and cut in quarters or cubes
  • 1/4 cup olive oil
  • 1 1/2 tsp kosher salt
  • 1 tsp freshly ground black pepper
  • 2 garlic cloves minced
  • 2 medium shallots chopped
  • 2 - 3 sprigs of fresh thyme
  • 3 - 4 sprigs of fresh sage


  • Preheat the oven to 400 degrees F
  • Cut the potatoes in quarters and place in a bowl. In a separate bowl mix oil, salt, pepper, and garlic. Toss oil mixture with potatoes, shallots, thyme, and sage until well coated. Transfer the potatoes to a sheet pan. Make sure you don’t overcrowd the pan and the pieces are spread out into 1 layer. Roast the potatoes for about 45 minutes to 55 minutes or until the pieces are browned and crisp

  • Cooking time will differ depending on your oven, and the size of the pieces. Flip the pieces at least 2x to ensure even browning.

  • Remove the potatoes from the oven. Remove the herbs and serve hot.
