This Roasted Potatoes recipe is the perfect side dish to accompany everything from Moroccan Inspired Slow Cooked Turkey Breast to a perfect Slow Cooked Spicy Pork Shoulder in Rum or Quick and Tasty Pan-Seared Fish Fillets
3poundssweet potatoes and white potatoespeeled and cut in quarters or cubes
1/4cupolive oil
1 1/2tspkosher salt
1tspfreshly ground black pepper
2garlic clovesminced
2medium shallotschopped
2 - 3sprigs of fresh thyme
3 - 4sprigs of fresh sage
Instructions
Preheat the oven to 400 degrees F
Cut the potatoes in quarters and place in a bowl. In a separate bowl mix oil, salt, pepper, and garlic. Toss oil mixture with potatoes, shallots, thyme, and sage until well coated. Transfer the potatoes to a sheet pan. Make sure you don’t overcrowd the pan and the pieces are spread out into 1 layer. Roast the potatoes for about 45 minutes to 55 minutes or until the pieces are browned and crisp
Cooking time will differ depending on your oven, and the size of the pieces. Flip the pieces at least 2x to ensure even browning.
Remove the potatoes from the oven. Remove the herbs and serve hot.
