Clean and cut the wings to separate the wingettes from the drumettes. Pat dry.
Preheat oven to 400 F degrees. Line a large baking sheet with aluminum foil sheet(s). Place an oven-safe cooling rack on top of the prepared baking sheet and spray it with non-stick cooking spray, and set aside.
Combine all dry ingredients in a small mixing bowl, and set aside. In a large mixing bowl, add the chicken wings and drizzle the oil. Use a rubber spatula to toss gently and to coat each piece.
Reserve about 1 - 2 tablespoon of the seasoning blend to sprinkle on the cooked wings later. This step is optional
Sprinkle the dry seasoning mixture and use either the rubber spatula or your hands to massage all of the chicken wings, coating evenly.
Add the chicken wings to the prepared baking sheet and bake for 45 minutes or up to one hour, depending on the size of the wings.
Serve with your favorite dipping sauce with a few sticks of celery and carrots.
