Ingredients
  

  • 2 cups Bob's Red Mill Organic Spelt Flour
  • 2 tbsp Brown Sugar
  • 2 tsp Baking Powder
  • 3/4 tsp Kosher Salt
  • 1/4 tsp Baking Soda
  • 1 3/4 cup Buttermilk
  • 1 Egg
  • 2 tbsp Butter melted
  • 1 tsp Vanilla Extract
  • 1/2 tsp ground or powdered ginger optional

Instructions
 

  • Preheat griddle to medium heat, about 350 F. In a medium bowl, whisk together flour, sugar, baking powder, salt, and baking soda; set aside. Whisk together buttermilk, egg, melted butter, and vanilla extract.
  • Add dry ingredients to wet ingredients and whisk to combine, taking care not to overmix the batter.
  • Pour 1/4 cup portion onto hot griddle and cook until bubbles form on the surface, about 3-4 minutes, flip and continue to cook through on the second side.
  • Serve hot. Recipe yields 4 servings.
