For the fish, a quick rinse each steak in a lemon base water bath. Pat dry with a paper towel and set aside on a plate.
Preheat the oven to 400 F.
In a small saucepan, combine the oil, garlic and fish seasoning, salt, and pepper. Cook over low heat, occasionally stirring until the garlic starts to brown - about 8 to 10 minutes. Remove and strain the oil into a small bowl, reserving the cooked garlic.
Brush the oil over the fish and season with salt and pepper (optional, but not necessary if on a low sodium diet). Cook the fish skin side up (if attached to the fish steaks) for 10 minutes.
Remove from the oven and top with garlic chips and any remaining oil. Return to the oven for about 7 minutes.
Remove and serve with your preferred side dishes.
It is imperative to use fresh garlic to achieve the ultimate tangy and tasty flavor.
Do not let the garlic brown thoroughly or it will taste bitter.
