Let's prep the meat first. Clean the meat the way you normally do. I usually clean my meat with lime, lemon, or vinegar. Cut the lime or lemon in half. Rub the lemon or lime on every piece. If you are using vinegar, give the meat a gentle wash with the vinegar mixed with water and then rinse.
Remove any excess fat and small bones and rinse the meat thoroughly. Pat dry the pork pieces with paper towels and place them in a bowl.
Add seasoning blends and olive oil.
(You need to use your hands for this part.) With both hands, massage every piece and make sure each is well coated with the seasoning blends and oil.
Let the meat marinate for at least 1 hour before roasting. This will help the flavors of the seasonings to penetrate the meat.
Prepare a baking sheet with a rack. Place the pork neck bones pieces on the rack, and roast in and 350 degrees Fahrenheit preheated oven for at least 2 hours and 45 minutes. (375 degrees depenting on the size of the meat and your oven temperature.)
Remove from the oven and serve immediately with vegetables and grains.

Notes
To purchase pork neck bones, check the meat section of the supermarket. The packages should be where all the other pork cuts are.
Make sure the pork is fully thawed before prepping. This will ensure proper cooking, and the seasoning will stick on the meat.
The seasoning combination is a delicious basic blend if you want to baste the pork with barbecue sauce. The taste is right on! You can even use another type of sauce if you like. For example, tamarind sauce or a sweet and spicy store-bought meat sauce is marvelous with this recipe.
It is best to use a baking sheet with a rack, so the pieces not only cook evenly but there's no need to turn them over.
Set the oven at 350 degrees preferably and depending on the oven temperature you may want to raise it to 375. Also the size of the pork beck bones matter. Either set the oven temperature at 350 or 375 degrees.
Place the pan in the middle of the oven to ensure proper heat circulation inside the oven while the pork is cooking.
I would not suggest adding additional salt because Noubess BBQ contains salt, and most lemon pepper seasoning also contain salt. Make sure you read the labels.
