  • Let's prep the meat first. Clean the meat the way you normally do. I usually clean my meat with lime, lemon, or vinegar. Cut the lime or lemon in half. Rub the lemon or lime on every piece. If you are using vinegar, give the meat a gentle wash with the vinegar mixed with water and then rinse.

  • Remove any excess fat and small bones and rinse the meat thoroughly. Pat dry the pork pieces with paper towels and place them in a bowl.
