  • 4 cups rolled oats
  • 1/4 teaspoon of salt
  • 1 teaspoon ground nutmeg
  • 1 teaspoon ground ginger
  • 1 ½ tablespoon cinnamon
  • 1/4 cup coconut oil
  • 2/3 cup honey
  • 1 teaspoon vanilla extract


  • Preheat the oven to 300F
  • Line two baking sheet pans with parchment paper and set them aside.
  • In a small bowl, mix the oil, honey, and vanilla. Using a whisk preferably, mix all the liquids until well incorporated.
  • Add the rolled oats, salt, cinnamon, nutmeg, and ground ginger in the large bowl. With a spatula, mix all the ingredients until well combined. Add the nuts at this time if using.
  • Pour the honey and oil mixture over the oats and blend well with the spatula or with your hands if preferred.
  • Spread oats onto the lined baking sheet pans and spread out evenly
  • Bake at 300F for 15-20 minutes until a nice golden brown in a 300F preheated oven. While the mixture is baking it is recommended to watch the baking process as every oven temperature is different. You may also need to add a few more minutes so the mixture could harden a bit more.
  • Allow the mixture to cool completely before crumbling the oats. Store in an airtight container and enjoy.
