Yellow Rice with Dried Shrimp

Rice with dried shrimp is a popular dish in many regions of the world. It’s delicious and served as a side dish, but I also love it as a main course. It’s very easy to make at home, and you can customize it however you like by adding more or less spice and protein or by making changes to the herbs and spices that go into it. You can also make it with yellow, white, or brown rice.
You may be thinking that this recipe for yellow rice with dried shrimp was inspired by Chinese cuisine. It was not! Growing up in Haiti, I used to eat this dish very often. My father used to make all types of rice recipes with vegetables and dried or salted seafood. We used to call it rice with tri-tri (dried shrimp).
It’s a simple dish that’s easy to make and goes great with any Caribbean entree. I use yellow jasmine rice, but I often make it with jasmine white rice. You can also make it with basmati rice, but the flavors are not the same. Jasmine rice is best to cook Caribbean rice recipes in my opinion.

Ingredients you will need for the Yellow Rice with Dried Shrimp
This recipe is easy to make and only requires a few common ingredients.
- Olive oil
- White or yellow rice
- Dried Shrimp
- Green peas, frozen and thawed
- Onion (red or white onion)
- NouBess Hot and Spicy Sauce
- Chicken Stock, optional if you are not using Chicken Bouillon Seasoning
- Chicken Bouillon Seasoning / NouBess Poultry Seasoning, Salt-Free
- Salt (optional)
- Whole cloves, optional
- Fresh Garlic Cloves
How to make the recipe for Yellow Rice with Dried Shrimp
- Place the dried shrimp in a bowl and rinse a couple of times. Drain completely and set aside.
- Clean, rinse and drain the rice. Set aside
- In a large saucepan, heat the oil. Add the garlic, NouBess hot sauce, and onion and cook, stirring for about 2 minutes.
- Add the peas and stir the mixture to mix all the ingredients together. If you are using whole cloves add them.
- Add the rice, dried shrimp and mix with the peas and onion mixture.
- Add the chicken stock and season to taste. (this is the time to season the rice before it starts to cook) – you may want to add Chicken Bouillon seasoning powder and additional hot sauce.
- Bring to a boil. When the water starts to evaporate and you can see the grains of rice, lower to heat and cover. Let simmer and cook for about 20 – 25 until the rice is fully cooked.
- Remove from heat and serve with your favorite entree.





Notes for the Yellow Rice with Dried Shrimp
- Substitute yellow rice with white rice if preferred.
- Add more oil if necessary. The rice may be a bit dry.
- Use frozen peas or lima beans
- You can add other types of seasonings if prepared.
- If you do not like the texture of the dried shrimp, grind and add to the rice before adding the water or stock.
- If you do not have homemade or store-bought stock, make a quick one by mixing water with chicken bouillon seasoning.
