Ingredients Breakdown

  • Dried green peas: These are the base of the soup, providing a nutty flavor and hearty texture. Soaking the peas overnight before cooking can shorten the cooking time.
  • Water: This is the liquid that will cook the peas and form the base of the soup.
  • Olive oil: This adds a touch of healthy fat and helps to saute the herb paste.
  • Garlic cloves: Garlic adds a pungent and aromatic flavor to the soup.
  • Chives: Chives add a mild oniony flavor and a pop of fresh green color.
  • Scallion: Similar to chives, scallions add a mild oniony flavor but with a slightly sharper bite.
  • Parsley: Parsley adds a fresh, herbaceous flavor to the soup.
  • Thyme: Thyme adds a warm, earthy flavor that complements the peas perfectly.
  • Whole cloves: Cloves add a warm, slightly sweet, and pungent flavor to the soup. Be careful not to add too many, as they can overpower the other flavors.
  • Frozen green peas – thawed: These add another layer of green pea flavor and texture to the soup. Using frozen peas saves time compared to using fresh peas in the pods.
  • Sugar to taste: A small amount of sugar can help to balance the savory flavors of the soup and enhance the natural sweetness of the peas.
  • Salt to taste: Salt is essential for bringing out the flavors of all the ingredients.
  • Fresh ground pepper to taste: Freshly ground black pepper adds a touch of heat and complexity to the soup.
  • White onion or shallots – optional: Onions or shallots add a deeper layer of savory flavor to the soup. Shallots have a milder flavor than onions.
  • Butter – optional: Butter adds a touch of richness to the soup. You can omit the butter for a vegan version.
  • Carrots – optional, add texture and flavor.
