This easy roasted cauliflower recipe is the perfect accompaniment for Oven Roasted Spatchcocked Chicken or citrus-marinated Pork Chops with Tamarind Shallots Sauce. Both dishes are excellent for a delicious meal Sunday dinner. 

The inspiration for this recipe came from Bon Appetit. I am always in search of new recipes. I stumbled upon Roasted Cauliflower with Onions and Fennel from Bon Appetit and decided to make my version. The featured image for the recipe showed a greenish cauliflower that is another variety of cauliflower. This particular cauliflower may be challenging to find, as it is only found in specialty supermarkets. No worries, you can always use the white-colored cauliflower that is commonly found in all supermarkets.

Making a Cauliflower Side Dish

Cauliflower, a vegetable full of healthy benefits, cook quickly and only needs a touch of herbs and seasonings. When shopping for vegetables, my list always includes a cauliflower. I don’t have to think twice about the recipe.

My recipes for Roasted Cauliflower with Cashews and Cauliflower Soup are popular side dishes in my home. This recipe is another favorite. Quick, simple, and the crunchiness of the fresh fennel makes this dish super exceptional.

I find the roasted cauliflower recipe a lot tastier than stewed. The roasting method is easier to follow and prepare. The cooking time may slightly differ. Adding other vegetables, such as fresh fennel, adds another aromatic flavor. Besides the taste, you also get the crunchiness, that is, if you don’t overcook the veggies. 

With this recipe, you can add Noubess Garlic and Herbs Seasoning, Noubess Steak Seasoning, Noubess BBQ SEasoning, and even Noubess Fish & Seafood Seasoning. Or, if you prefer to add your seasoning blend, remember that Mr. Dash Original Seasoning Blend and an aromatic blend of Italian Seasoning will work as well. Just add a sprinkle of lemon zest, and you will continue having a delicious side dish no matter what seasoning blend you use.  

This recipe is perfect for most types of diets. It is keto-friendly and an excellent recipe to keep with your other keto recipes. You can add leafy greens and make a super healthy side dish.

How to make this cauliflower recipe

Let me start by saying that cooking fresh vegetables is always the best way to eat and consume healthy nutrients. This recipe will make you more creative with your seasoning blend. You will also have the ability to mix other ingredients, vegetables and become a culinary expert. 🙂 

To start, 

  1. Remove the cauliflower from the plastic wrap if any. (I usually spray all my vegetables with vinegar and then rinse with room temperature water.) Clean the cauliflower and pat dry. 
  2. With the help of a knife,  break the cauliflower into uniform bite-size. You want all the pieces to be almost the same size so they can cook evenly. 
  3. Take the fennel, clean first, cut in half and then cut lengthwise into medium-sized pieces or slices. 
  4. Slice the onion. 
  5. If you’re using a habanero pepper, remove the seeds and slice thinly. 
  6. Add everything into a bowl and set aside
  7. Prepare the seasoning blend by mixing the olive oil with your preferred seasoning blend. (add salt and pepper if needed)
  8. Toss the vegetables with the olive oil and seasoning blend mixture. 
  9. Place into a prepared baking dish and roast in the preheated oven at 425 F for 25 minutes and until golden brown. 
  10. Serve hot or at room temperature.

With every cauliflower recipe, I always try different combinations. I love mixing different types of vegetables. I also mix beans, especially black beans, because of their health benefits. Beans are also commonly used in vegan recipes.

  • A keto-friendly meal
  • Do not overcook, and you want some crunchiness
  • You can also stir fry the vegetables. This method will take some time. You will also need to be attentive and continuously stir the mixture.
  • Adding lemon juice is a great idea. The acidity in the lemon adds a nice lemony taste.
