Black Beans
- Best for: Haitian black rice and beans, black bean sauce, soups, and side dishes.
- Black beans have a rich, earthy flavor and create a dark cooking liquid that’s traditionally used to prepare Haitian black rice and beans. Like red kidney beans, they’re excellent for making sos pwa, hearty soups, and everyday family meals.

White Beans / Navy Beans
- Best for: White bean sauce, soups, stews, and purรฉes.
- White or navy beans have a mild flavor and soft texture that easily absorb herbs, garlic, onions, and Haitian epis. They cook into a smooth, creamy consistency that’s perfect for bean sauces and comforting soups

Cannellini Beans
- Best for: Creamy soups, bean sauces, and as a substitute for navy beans.
- Cannellini beans are a great substitute when navy beans aren’t available. Their creamy texture makes them ideal for soups, purรฉes, and any recipe that calls for white beans.
Lima Beans (Large Butter Beans)
- Best for: Soups, stews, rice dishes, and vegetable recipes.
- Large lima beans, often called butter beans, have a creamy texture and hold their shape well during cooking. They’re delicious in soups and hearty stews and pair beautifully with vegetables and slow-cooked meats.

Pigeon Peas (Gandu)
- Best for: Rice dishes, soups, and stews.
- Pigeon peas are another important bean found throughout the Caribbean. While they aren’t used as often in everyday Haitian cooking as kidney or black beans, they’re commonly prepared in rice dishes and festive meals across the region.

Black-Eyed Peas
- Best for: Rice dishes, soups, stews, and fritters.
- Black-eyed peas cook relatively quickly and have a mild, earthy flavor. They’re commonly used in traditional Caribbean and African-inspired recipes and are an excellent addition to soups and rice dishes.
How to Choose Your Essential Beans
Each type of bean has its advantages depending on the recipe and the amount of time you have available.
Dried Beans
Dried beans are my preferred choice because they produce the best flavor and texture. The cooking liquid can also be used to prepare rice, soups, and sos pwa, giving dishes a richer taste than canned beans. Although they require more cooking time, they’re also the most economical option.
Canned Beans
Canned beans are a convenient option when you’re short on time. I recommend rinsing them well before using them to remove excess sodium. While they won’t produce the same flavorful cooking broth as dried beans, they’re perfect for quick weeknight meals.
Fresh Beans
Fresh beans aren’t always easy to find, but they’re a wonderful seasonal treat when available. They cook faster than dried beans and have a delicate, slightly sweeter flavor.
Frozen Beans
Frozen beans are another convenient option, especially for pigeon peas and lima beans. They retain much of their fresh texture while significantly reducing preparation time.
