Pineapple, Papaya, and Cucumber Salad
This refreshing recipe of Pineapple, Papaya, and Cucumber Salad is simply delicious and easy to make. A fruits and vegetable salad is a great combination to complement your delicious roasted or grilled chicken. It is also one of the best ways to show off your salad preparation skills.
The salad dressing is perfectly spiced with crushed red pepper flakes, salt, pepper, and honey for sweetness. The salad itself is comprised of bold flavors from fresh parsley, red onion, and red bell peppers. This salad combination is one of the most flavorful and healthy recipes you will make this season.

The ingredients you will need to make this Pineapple, Papaya, and Cucumber Salad recipe.
- Pineapple: a whole ripe pineapple will do the job.
- Papaya: ripe papaya preferably will be best. Green papayas are not that sweet, and you will have to add more honey and possibly sugar to the salad dressing. Not a healthy option!
- Cucumber: English cucumbers are best in these types of salad because you don’t necessarily have to remove the seeds. Regular cucumbers sometimes have large and kinda hard to chew seeds. Choose a young cucumber, it will have smaller and softer seeds.
- Red Onion: you can use shallots or scallions if preferred. White onion does not add the deep onion flavor this salad needs when mixing the salad dressing.
- Red Bell Pepper: a splash of red is always nice to see in a healthy salad and especially when you have leafy vegetables.
- Fresh Parsley: I used 1/2 cup because I love the aroma and flavor of parsley in salads. You can add 1/4 cup if preferred.

For the salad dressing, you will need the following ingredients
- Fresh lime juice: please do not substitute this ingredient for bottled lemon or lime juice. They have an aftertaste that will be very noticeable.
- Extra virgin olive oil: always use the best. Sometimes you may find that many olive oils are blended with other oils. This is fine if you don’t mind. But I would suggest spending more money on real olive oil. You won’t regret it and especially for vinaigrettes.
- Strawberry Balsamic vinegar: I love this type of balsamic vinegar because it adds a lot of flavor to salad dressings and vinaigrettes. A little bit of sweetness and a little bit of acidity is perfect.
- Honey: if you have raw honey this salad dressing will taste phenomenally good.
- Crushed Red Pepper Flakes: do not add too much if you do not like a lot of heat. This is a great addition.
- Salt and pepper: add enough to obtain the taste you want.
