  • Red Bell Pepper: a splash of red is always nice to see in a healthy salad and especially when you have leafy vegetables.
  • Fresh Parsley: I used 1/2 cup because I love the aroma and flavor of parsley in salads. You can add 1/4 cup if preferred.

For the salad dressing, you will need the following ingredients

  • Fresh lime juice: please do not substitute this ingredient for bottled lemon or lime juice. They have an aftertaste that will be very noticeable.
  • Extra virgin olive oil: always use the best. Sometimes you may find that many olive oils are blended with other oils. This is fine if you don’t mind. But I would suggest spending more money on real olive oil. You won’t regret it and especially for vinaigrettes.
  • Strawberry Balsamic vinegar: I love this type of balsamic vinegar because it adds a lot of flavor to salad dressings and vinaigrettes. A little bit of sweetness and a little bit of acidity is perfect.
  • Honey: if you have raw honey this salad dressing will taste phenomenally good.
  • Crushed Red Pepper Flakes: do not add too much if you do not like a lot of heat. This is a great addition.
  • Salt and pepper: add enough to obtain the taste you want.

How to make this salad

The first step is to make the salad dressing. Once you are done, set it aside and start preparing the fruits and vegetables.

Ingredients
  

  • 1 pineapple cut into chunks
  • 1 papaya cut into chunks
  • 1 cucumber seeded, and cut into half-moon shapes
  • 1 red onion sliced thin
  • 1 red bell pepper diced
  • 1/2 cup fresh parsley chopped finely

Salad Dressing

  • 2 tablespoons fresh lime juice
  • ¼ cup extra virgin olive oil
  • 1 teaspoon Strawberry Balsamic vinegar
  • 2 tablespoons honey
  • ½ teaspoon red pepper flakes
  • Salt and pepper to taste

Instructions
 

  • In a small bowl, add lime juice, olive oil, balsamic vinegar, honey, and red pepper flakes, to a small bowl. Using a whisk, vigorously whisk all the ingredients to blend together. Add salt and pepper to taste and whisk again to blend.
  • In a large mixing bowl, add pineapple, papaya, cucumber, red onion, parsley, and red bell pepper.
  • Pour dressing over the fruits and vegetables and toss gently to mix well.
  • Let it sit in the refrigerator for at least 30 minutes to one hour before serving. The flavors of all the ingredients will have plenty of time to infuse.
